Boludo's story begins in Buenos Aires, Argentina, where founder Facundo "Che" DeFraia spent countless hours cooking alongside his grandmother. In her kitchen, he learned the techniques, recipes, and traditions that continue to inspire Boludo's authentic Argentinian empanadas, pizza, and family-style hospitality today.

After moving to the United States in the early 2000s, Facundo brought his passion for Argentinian cuisine and artisan dough-making to Minneapolis. His dedication to quality and craftsmanship earned him recognition from local food critics, including the nickname "The Dough Whisperer" from the Minneapolis Star Tribune.
The Birth of Boludo
Inspired by the flavors and culture of his childhood, Facundo opened Boludo in 2018 in the Kingfield neighborhood of South Minneapolis. What began as a neighborhood restaurant quickly became a destination for handcrafted empanadas, Argentinian-style pizza, and memorable dining experiences.
